Interest in the utilization of bioactive plant compounds in foods has increased due to their biochemical activities (antioxidant, antimicrobial, etc.), and as alternatives in the reduction of the use of high concentrations of chemical substances. However, some of these additives are hydrophobic, thus being harder to disperse into the food matrix, which is generally water-based. A good alternative is the use of low concentrations of these compounds as nanoemulsions. The objective of the present study was to develop oil-in-water nanoemulsions containing “dedo-de-moça” pepper extract for food applications. Research in the development of these nanoemulsions was carried out using a high-speed homogenizer, followed by a high-pressure homogenizer. The influence of the following parameters was assessed: type and concentration of surfactants, hidrophilic-lipophilic balance, lipid/aqueous phase ratio, surfactant/oil ratio, pepper extract composition in nanoemulsion, and processing conditions. Nanoemulsions were evaluated by environmental (centrifugal and thermal) and storage stabilities, characterized by average droplet size and ζ-potential measurements, color, interfacial tension, atomic force, and cryo-scanning electron microscopy. Those with average droplet size between 132 ± 2.0 and 145 ± 1.0 nm were developed depending on working pressure and number of cycles; ζ-potential was around ? 36.71 ± 0.62 mV and the best nanoemulsion was stable to centrifugation and most of the thermal stresses. Droplets were characterized with cryo-scanning electron microscopy as being spherical, homogeneous, and stable, and remained stable when stored at 4 °C and room temperature for over 120 days. The pepper nanoemulsion, developed in the present study, has potential applications in the food industry.  相似文献

Cereals are a very important part of the human and animal diets. However, agricultural products can be contaminated by moulds and their mycotoxins. Plant extracts, particularly those of Equisetum arvense and Stevia rebaudiana have been reported previously to contain antioxidant compounds which may have antifungal properties. In this study, E. arvense and S. rebaudiana extracts were tested for their control of mycotoxigenic fungi in maize. The extracts were tested separately and as a mixture for their effect on growth of Aspergillus flavus and Fusarium verticillioides. Extracts were added to unsterilised inoculated maize at different water activity (a(w)) levels (0.85-0.95). Moulds were inoculated and incubated for 30 days. Results confirmed that the extract of E. arvense and a mixture 1:1 of Equisetum-Stevia may be effective for the inhibition of both growth of A. flavus and aflatoxin production at high water activity levels (pre-harvest conditions). In general, growth of the F. verticillioides was reduced by the use of plant extracts, especially at 0.95 a(w). However, fumonisin presence was not significantly affected. E. arvense and S. rebaudiana extracts could be developed as an alternative treatment to control aflatoxigenic mycobiota in moist maize.  相似文献

The development of mixed systems, formed by locust bean gum (LBG), and κ-carrageenan (κ-car) can offer new interesting applications such as the development of edible films with particular properties. κ-car/LBG blend films with different ratios were developed, and their effects on films’ physical properties were assessed. Thermogravimetric analysis (TGA), X-ray diffraction (XRD) patterns, dynamic mechanical analysis (DMA) and Fourier-transform infrared (FTIR) spectroscopy techniques were used to highlight the interactions between the two polysaccharides. The addition of κ-car to LBG improved the barrier properties of the films leading to a decrease of water vapor permeability (WVP). Improved values of elongation-at-break (EB) were registered when the ratio of κ-car/LBG was 80/20 or 40/60 (% w/w). Moreover, the κ-car/LBG blend films enhance the tensile strength (TS) compared to κ-car and LBG films. FTIR results suggested that hydrogen bonds interactions between κ-car and LBG have a great influence in films’ properties e.g. moisture content, WVP. Therefore, different κ-car/LBG ratios can be used to tailor edible films with enhanced barrier and mechanical properties.  相似文献

This article presents an evolutionary topology optimization method for compliance minimization of structures under design-dependent pressure loads. In traditional density based topology optimization methods, intermediate values of densities for the solid elements arise along the iterations. Extra boundary parametrization schemes are demanded when these methods are applied to pressure loading problems. An alternative methodology is suggested in this article for handling this type of load. With an extended bi-directional evolutionary structural optimization method associated with a partially coupled fluid–structure formulation, pressure loads are modelled with hydrostatic fluid finite elements. Due to the discrete nature of the method, the problem is solved without any need of pressure load surfaces parametrization. Furthermore, the introduction of a separate fluid domain allows the algorithm to model non-constant pressure fields with Laplace's equation. Three benchmark examples are explored in order to show the achievements of the proposed method.  相似文献

We propose a method for selecting the research guarantor when papers are co-authored. The method is simply based on identifying the corresponding author. The method is here applied to global scientific output based on the SCOPUS database in order to build a new output distribution by country. This new distribution is then compared with previous output distributions by country but which were based on whole or fractional counting, not only for the total output but also for the excellence output (papers belonging to the 10 % most cited papers). The comparison allows one to examine the effect of the different methodological approaches on the scientific performance indicators assigned to countries. In some cases, there was a very large variation in scientific performance between the total output (whole counting) and output as research guarantor. The research guarantor approach is especially interesting when used with the excellence output where the quantity of excellent papers is also a quality indicator. The impact of excellent papers naturally has less variability as they are all top-cited papers.  相似文献

A quantum analysis of the generalized polarization properties of multimode single photon states is presented. It is based on the optical field-strength probability distributions in such a way that generalized polarization is understood as a significant confinement of the probability distribution along certain regions of the multidimensional optical field-strength space. The analysis is addressed to multimode integrated waveguiding devices, such as N?×?N integrated directional couplers, whose modes fulfil a spatial modal orthogonality relationship. For that purpose a definition of the quantum generalized polarization degree in a N-dimensional space, based on the concept of distance to an unpolarized N-dimensional Gaussian distribution, is proposed. The generalized polarization degree of pure and mixture multimode single photon states and also of some multi-photon states such as coherent and chaotic ones, is evaluated and analyzed.  相似文献

We present an analytical formula for the fast and accurate evaluation of nonlinear absorption in materials exhibiting an admixture of different multiphoton processes. This approach is specifically addressed for its use in thin films when the slowly varying envelope approximation applies. The contribution of absorptions of distinct order is conveniently averaged in order to use well-known expressions for a single multiphoton process. In the latter case, therefore, our simple expression is reduced toward the exact solution.  相似文献

Abstract: The objective of this work was to select a Ultraviolet‐C (UV‐C) treatment for fresh‐cut mature green bell pepper, and to evaluate the effect of its combination with refrigeration on quality maintenance. Bell pepper sticks were treated with 0, 3, 10, or 20 kJ/m2 UV‐C in the outer (O), inner (I), or both sides of the pericarp (I/O) and stored for 8 d at 10 °C. During the first 5 d of storage, all UV‐C treatments reduced deterioration as compared to the control. The treatment with 20 kJ/m2 I/O was the most effective to reduce deterioration, and was used for further evaluations. In a second group of experiments, mature green bell pepper sticks were treated with 20 kJ/m2 I/O, stored at 5 °C for 7 or 12 d and assessed for physical and chemical analysis, and microbiological quality. UV‐C‐treated fruit showed lower exudates and shriveling than the control. UV exposure also reduced decay, tissue damage, and electrolyte leakage. After 12 d at 5 °C, UV‐C irradiated peppers remained firmer and had higher resistance to deformation than the control. The UV‐C treatments also reduced weight loss and pectin solubilization. UV‐C exposure decreased the counts of mesophile bacteria and molds, and did not affect acidity or sugars. UV‐C‐treated fruit stored for 0 or 7 d at 5 °C did not show major differences in antioxidants from the control as measured against DPPH? or ABTS?+ radicals. Results suggest that UV‐C exposure is useful to maintain quality of refrigerated fresh‐cut green pepper. Practical Application: Exposure to UV‐C radiation before packing and refrigeration could be a useful nonchemical alternative to maintain quality and reduce postharvest losses in the fresh‐cut industry.  相似文献

BACKGROUND: Chitosan (AC) and five hydroalcoholic extracts from Lithospermum erythrorhizon (SE), Rheum palmatum (RE), Thymus vulgaris (AT), Lippia citriodora (PLX) and a mixture of Rosmarinus officinalis, Salvia lavandulifolia and Thymus mastichina (LA) were tested for antimicrobial activity against bacteria, yeasts and filamentous fungi using two broth dilution methods. The effects of adding single extracts on naturally occurring micro‐organisms and sensory qualities of raw tomato juice were also evaluated. RESULTS: SE extract exhibited the strongest activity, with minimum inhibitory concentrations (MICs) of 100–400 µg mL?1 for Gram‐positive and 1600–3200 µg mL?1 for Gram‐negative bacteria. Enterobacter aerogenes showed the greatest susceptibility to AC (MIC 1600 µg mL?1). Lethal effects of extracts and AC were achieved at a minimum bactericidal concentration (MBC)/MIC ratio of 2 in 88% of assays. SE and RE extracts and AC also exhibited antifungal effect against yeasts, but they had no activity on filamentous fungi. Control and 100 mg L?1 SE‐added tomato juices did not differ in acceptance, but this SE concentration was not effective in the control of microbial load throughout cold storage. CONCLUSION: Results confirm the antimicrobial potential of the plant extracts, but additional research is needed until the agents responsible for the activities have been determined in order to use them as natural constituents of multiple‐barrier food preservation systems. A theoretical impedance function is deduced for a proposed mechanism of passive film formation of steel in contact with alkaline aqueous media involving two reaction intermediates: mixed oxide with similar stoichiometry to magnetite and Fe(III)-oxides. The reduction reaction of dissolved oxygen is considered as the only cathodic reaction compensating the anodic current induced by the formation of iron oxides at open circuit potential. The iron dissolution takes place through a chemical dissolution of ferric oxide. A two-layered passive film with 3D structure is considered. A satisfactory agreement between the digital simulations on the basis of the theoretical impedance function and experimental spectra validates the proposed model.  相似文献
